The Pastry Sous Chef reports directly to the Executive Sous Chef and Executive Chef. This individual oversees the production of baked goods and pastries for the bar, 3 meal restaurant, market, regency club, and banquet operation. They are responsible for the overall success of the pastry department. Other responsibilities include managing the pastry team, writing the department schedule, ordering, writing prep lists, and menu conceptualization.
